Deciding on the food for backpacking trips
can sometimes be a little challenging because weight, space and freshness are big factors to consider. That alone can narrow down your meal ideas.

Deyhdrated meals are a great choice to take, we always bring these for some of our hiking meals but it's also nice to bring along fresh food to cook and even fresh fruit to snack on.
I'd like to share a couple of our favourite backpacking meal standbys and would love you to share your meal recipes/ideas too.
The last time my husband and I headed out on a backpacking trip we encountered a great group of folks that were cooking up the most wonderful smelling foods and it inspired us to expand our backpacking cooking borders.
So lets share our cooking stories, recipes and ideas and even a few pictures too.
Garlic Sausage Stir Fry over Rice
- garlic sausage
- fresh garlic
- vegetables of choice - red pepper, zucchini,asparagus,celery,carrot
- olive oil and salt and pepper
- rice of choice - white/brown/instant or regular
Cooking Instructions:Begin cooking rice according to instructions. If using white rice, pre-measure at home the quantity you need. Use approximately 1 cup rice to 2 cups water. Boil and let sit on low heat or off heat if you need your stove to cook the remainder of your dinner.
While rice is cooking, slice onions, garlic, the vegetable of your preference and sausage. Note: You can pre-slice your veggies at home but be careful of them getting soft and mushy on you. We prefer bringing them uncut with us to preserve their freshness.Heat up a small amount (approx. 1-2 tbsp) of olive oil in frying pan. Toss in sliced vegetables and cook over medium heat for approx. 5 minutes until just beginning to soften. If there is room in your pan add your sliced garlic sausageand continue cooking for a few more minutes just until the garlic is heated through.
If you do not have room in your pan to add the sausage, remove vegetables and cover in a bowl or plate. Add sausage to pan and cook over medium heat until heated through. This should only take a few minutes depending on the thickness of the slices. Divide rice between bowls or plates, top with vegetables and sausage and enjoy!
Teriyaki Tofu Stir Fry over RiceThis is cooked the same way as above except using tofu in place of the sausage.
I prefer to either marinade my tofu at home and bring up in a resealable bag or buy it pre-marinaded at the grocery store.
